Back in the late 1880s, Phở began as a popular street food in Northen Vietnam (Hanoi & Nam Dinh) and sold by street vendors, who carried mobile kitchens on their shoulders with poles. As Phở gained popularity, it was then served in restaurants. This dish naturally got introduced to the Central and then to the South around 1954 when Vietnam was divided into two regions (North & South). And finally after the Vietnam War in 1975, Phở was introduced to countless countries worldwide when Vietnamese refugees fled and brought their cherished recipes with them. Phở's popularity continued to spread exponentially with the word "pho" being added to the Shorter Oxford English Dictionary in 2007. Pho was also listed on the "World's 50 most delicious foods" compiled by CNN Go in 2011.
